Arabs are known to mix halloumi cheese with watermelon… oh yeah! It’s a thing alright. Usually it’s served as a dessert along side each other and eaten in gatherings especially during the hot summers which is the perfect season for watermelons.
I wanted to take something that we already know and are used to and elevate it. I do love acidic food, and especially balsamic vinegar! The watermelon & cheese dish always lacked something, at least to me it did, I felt that it needed something to tie the dish together.
This super easy recipe bridges that gap and binds flavors and textures in harmony with each bite.
Watermelon Halloumi Sandwiches Recipe
- 10 watermelon triangles
- 5 halloumi triangles
- 1/4 cup walnuts, chopped (keep 5 pieces whole)
- 1/2 cup mint leaves (or sage)
- 2 Tbsp balsamic vinegar
- 1 Tbsp honey
To make a balsamic glaze, combine balsamic vinegar and honey in a small saucepan. Cook while stirring over low to medium heat until the mixture is reduced by two-thirds and slightly thick.
Assemble the sandwiches, starting with a watermelon triangle followed by halloumi, mint leaves and crushed walnuts.
Drizzle the sauce and top off with a layer of watermelon, a few mint leaves and a whole walnuts.
