Summer is upon us and it seems like it’s going to last for a while! I’m always looking for new ways to cool off while treating my friends to something special, but not something that takes ages to prepare. I also usually use ingredients that are in season, like strawberry & watermelon. That’s when you get it cheapest & most flavorful.

All-in-all this popsicle recipe will take 15 minutes of your time! The rest is just waiting on it to freeze, not so demanding after all?

You can substitute strawberries with any fruit you like. I find that balsamic vinegar pairs perfectly with berries & stone fruit.

I enjoyed this recipe so much that I’ve prepared it a few times since!

Balsamic Strawberry Popsicles

Balsamic Strawberry Popsicles Recipe

Serves 3

  • 1 cup strawberries, diced
  • 1/2 tbsp balsamic vinegar
  • 1/4 cup al alali Acacia Honey
  • 2 tbsp orange blossom
  • 1/2 cup water
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup tea biscuits – crushed

In a heated pot, add strawberries & balsamic vinegar. Cook for 10 minutes

Let cool then transfer to blender. Add al alali Acacia Honey, orange blossom and water. Add mint, mix together then transfer to ice cream molds

Freeze for 3 hours or until set

Let it out for 1 minute before consuming.

Serve with crushed biscuits and enjoy!
