Sticky zesty honey chicken – I get all giddy & happy when I hear those words. Seriously, I think my heart skips a beat! From honey to lime, everything revolving around these flavors excites me.
I had prepared this dish for the first time a few months ago, but over the weekend a friend of mine came over for a tanning session by the pool. We were so hungry by the end of the day and needed a quick a fix. So I prepared this dish for her! This time I didn’t wait for the chicken to marinate, it was still flavorful. This time I added oyster sauce, sesame oil & peanuts too! It was added in the last 10 minutes of cooking. This dish was so good we refilled our plates — TWICE!
I definitely don’t encourage overeating, but we simply couldn’t help it – had to go burn off the excess at the gym the following day.
The combination of honey and lime is incredible. Honey enriches the sauce and makes it all sticky & gooey, while the lime lifts it up & gives it an unprecedented freshness. I mean seriously what more can I ask for!
Sticky Zesty Honey Chicken Recipe
- 1/2 cup rice, cooked
- 500g Chicken, cut into cubes
- 1/2 cup al alali Multiflora Honey
- Juice of 1/2 lime
- 1/2 lime zest
- 2 garlic cloves, crushed
- 1 avocado, sliced vertically
- 2 stalks green onion, chopped
- 2 tbsp sesame seeds
- Salt, to taste
Marinate chicken by adding al alali Multiflora Honey, lime juice, lime zest and garlic for 2 hours. (Note: You can choose to cook the chicken immediately, but the flavor wouldn’t have developed or be as pungent).
Pre-heat the oven to 180˚C (355˚F).
Place chicken on a roasting tray with half the marinade and roast for 10 – 15 minutes.
In a pot, add the remaining marinade, cook on reduced heat till it bubbles and gets sticky. Stir occasionally.
Remove chicken from oven and pour over the reduced sticky sauce and cook for an additional 5 minutes.
