This raspberry pomelo salad takes me back to my childhood days.
Growing up, my mother always loved pomelo. I remember her getting excited when it’s in season & making sure to stock up on it. I also remember her trying to convince me to eat some… for some reason I had zero intention of trying it then.
The years passed and one day I found myself in front of a bowl of pomelo. I guess I was in an “adventurous” mood, willing to try something new & getting over my childhood disregard for this fruit ! and you know what! Mother’s are always right! I LOVED it!
The supermarket seems to be stocking it quite frequently these days & I thought to myself, why not look for new ways to eat pomelo. This is one way I would have it.
