30-Minute Carrot Orange Soup

If you’re looking to spice up you’re Ramadan table then I’ve got just the dish for you! Seriously though, I could have soup any & every day of the year so to all the soup lovers out there – I feel yaaa!! & Ramadan is perfect cause you can always find a warm bowl of soup in every turn.

Alright, alright enough with the romantics, but you’re living up Ramadan like I am these days then it consists of a million and one iftars at my home or other ppls homes & let’s face it, at some point we’re gonna get bored of that lentil soup – so here’s the perfect alternative solution that will leave your guests with smiles on their faces!

Do you know what I realized while writing this post? This recipes is vegan, dairy-free & gluten-free – not sure if I’m missing anything else… but you get the gist. This should be able to serve most of your guests dietary requirements which is perfect!

  • 1/4 cup yogurt (or vegan yogurt)

  • 1/4 cup yogurt (or vegan yogurt)

Instructions
Soup
  1. In a deep pot, heat olive oil & sauté onions & garlic for 2 minutes.
  2. Add in the carrots, nutmeg, pepper & ginger & continue to sauté for another few minutes.
  3. Add in the vegetable stock & cover the pot to cook the carrots through (approx. 15 minutes!).
  4. Blend the mixture till you achieve the desired consistency.
  5. Add in the orange juice & yogurt. Then season to taste. NOTE! If you find that the soup is too thick add water or vegetable stock as needed, add 1/2 a cup at a time.
Minty Croutons
  1. In a wide pan, heat some olive oil & add in the diced toast bread on high heat.
  2. Add the dried mint & salt & toss for 5 minutes or until you get it crunchy.
Garnish
  1. Serve the soup with 1 tsp yogurt on top with some croutons! DONE!
