To cake or not to cake is the question?

In case you were wondering… that was rhetorical.

Over the years, I’ve come to prefer homemade cakes over store bought for several reasons.

#1 I control the sugar level, this is so important to me cause I really don’t like super sweet cakes!

#2 I fulfill my cravings on the spot – I realize this can be a con too hahah but I’ll keep it positive on here, but seriously though, I can make the flavors I’m craving in that moment & not go out and look for it.

#3 Stocking up once for baking ingredients, means they will last you for a long time and you have easy access to it, anytime – to make cakes, cookies, donuts, scones, etc… convenient!

So why marble cake today?

I like throwing back once in a while to things I ate as a kid. I remember tagging along with my mom to go to the supermarket when I was merely 10 years old, or even younger. And I loveeed reaching the refrigerated cake section, there was always a pack of marble cake. Of course, I had to beg & plead for it lol until mom got it for me. Overall we ate very healthy food at home, we didn’t had fuzzy drinks or junk, so this was a treat.

I don’t blame my parents, God only knows what kind of things are in these pre-packed ready made goodies back then.

That’s why I wanted to take this opportunity & prepare a healthier version of an old favorite. I cut down on the sugar in this, it will still taste sweet but not overpowering in any way. What will make it stand out is the quality of chocolate & vanilla you use, these will have a big impact on overall flavor.

Adding a pinch of salt accentuates the overall flavor & will make the dish seem sweeter (when it really isn’t) got my drift?

Marble Cake Yum
The easiest marble cake you'll make! It's lighter & less sweet than you're typical version.

Instructions
  1. Preheat oven to 170C.
  2. In the mixing bowl, add vinegar, lemon & butter.
  3. Add eggs in the bowl & whisk till light and fluffy, then add sugar a little at a time.
  4. Add remaining ingredients except for cocoa powder.
  5. Distribute batter in 1 or 2 greased cake tins or molds. Keep ¼ of the portion & whisk in cocoa powder.
  6. Layer on top of the vanilla batter.
  7. Using the bottom part of a spoon make circular motions to create a marble effect.
  8. Tap out the air from the molds.
  9. Bake for 25-30 mins.
  10. Remove and let cool completely in mold before transferring.
