These blueberry Peanut Butter Quinoa Energy bars are the best way to start my week! I baked them on a Saturday and they will last me all week long for breakfast or as a snack.
You can choose to refrigerate these for a week or freeze them for a month!
Like most of my recipes, this recipe is super easy & healthy to make. This could be a fun cooking project with the kids!
White chocolate would go perfectly with this mix, go ahead and get creative!
Blueberry Peanut Butter Quinoa Energy Bars Recipe
- 1 cup cooked quinoa
- 1 cup oats
- 1 cup blueberries
- ¼ cup almonds, chopped
- 2 1/2 tbsp peanut butter
- 2 tbsp honey
- 1 tsp vanilla
- 1 tsp vegetable oil
- ¾ tsp baking powder
- ¼ tsp salt
Preheat the oven to 180C.
Mix all the ingredients.
Bake in a greased baking sheet for 15 minutes until golden brown.
Remove from oven & cut up. Let cool in pan for 15 minutes later.
