MINI LENTIL CURRY BURGERS


 

If you like veggie burgers then this is the right recipe for you!!! It’s so full of flavor & it’s super easy to make!

Makes 8

 

Ingredients 

Veggie Patty

  • 4 cups vegetable stock
  • ½ cup quinoa
  • ¼ cup red lentils
  • 1/8 cup oats
  • ½ white onion, finely chopped
  • 4 sun-dried tomatoes slices, chopped
  • ¼ tsp turmeric
  • ¼ tsp coriander powder
  • 2 tsp curry powder
  • Red chili pepper, pinch
  • Salt & pepper, to season

 

Garnish

  • 2 stalks mint
  • Coriander
  • Brussel sprouts
  • 1 lime, cut into 8 slices
  • 1 cup yogurt
  • 8 buns

 

In a heated pot, cook the quinoa, lentils, oats and onions in vegetable stock. Add in the remaining veggie patty ingredients and cook on medium heat for 20-30 minutes. If needed, add extra water to continue cooking. Then let cool. Meanwhile, preheat your oven to 180C, and prepare your patties. Use a shaper/mold for consistency. Bake on a lined baking tray for 25 minutes. Remove from heat and let cool for a few minutes before assembling. Assemble your bun by adding your veggie patty, a squeeze of lime, followed by brussels sprouts and mint leaves, yogurt then the top bun. Serve with extra yogurt & lime on the side.
