ITALIAN TOFU SCRAMBLED EGGS

Craving a super healthy scrambled eggs recipe? This scrambled eggs & tofu ala Italiana is absolutely delicious & only takes a few minutes to make! It’s simple, it’s easy & it can be prepped in one pan!

Ingredients

  • ½ cup Tofu, small cubes
  • 1 egg
  • ½ red onion
  • ½ red chili
  • ¼ red bell pepper
  • ¼ orange bell pepper
  • 1 bay leaf
  • 1 tsp mixed Italian herbs
  • salt & pepper
  • mint leaves

Drain tofu & cover with a towel for 10 mins. In a hot skillet, add your onions, chili, bay leaf & mixed herbs. Sauté for 2 mins. Add tofu sauté for a minute then add egg. Mix well. Add bell peppers & season to taste. (if you’re feeling wild, add ½ tbsp of tomato paste now). Garnish mint & serve with a side of pita bread.
