Craving a wholesome breakfast? This baked egg in avocado breakfast will fill you up real good!
Serves 2 people
- 1 ripe avocado
- 2 free-range egg
- Pinch of salt & cayenne pepper
- 1 tsp dried rosemary
- 1 tsp parsley
Preheat the oven to 180°C.
Cut the avocado lengthwise and discard of its core. With a spoon begin removing part of the avocado’s filling to make way for the egg. Place the avocados on a baking sheet, & break an egg in each half. Sprinkle salt, cayenne pepper, dried rosemary & parsley.
Bake for 10 minutes if you like your eggs runny, or keep longer to get the desired result. Serve immediately.
