Who said breakfast has to be boring? repetitive? uninspiring? I simply love a typical banana pudding, but there’s no question, it’s packed with sugars & calories (not that I usually count) but it sure takes it’s toll if not eaten in moderation! And a dessert that good is simply hard to resist.

So I thought to myself, why note prepare a healthier version. Better yet, A BREAKFAST VERSION! Bulls eye!

Greek yogurt has become a household staple in many young homes, we’ve moved away slightly from the usual Arabic cheese & labaneh breakfast to more cereals, granola & yogurt. Here’s my take on a yogurt dish elevated to hit the spot & keep you full till breakfast.

Go ahead, try it out! I would recommend making more than you think you need as I bet you your family, friends & kids will ask for more!

 Healthy Banana Pudding Breakfast Tart Recipe

Makes 1

Ingredients
  • 45 g digestive biscuits, crushed
  • 15 g soft butter
  • 100 g Greek yogurt
  • 1 banana
  • ¼ tsp cinnamon
  • ½ passion fruit pulp
  • 1 tbsp chia seeds
  • ½ tbsp dark chocolate, grated
Preparation

Combine the crushed biscuits with the soft butter, then spread on 12cm mold. Refrigerate for 15 minutes.

In a bowl mix, mash half the banana with the yogurt. Mix in the cinnamon.

Spread mixture on the biscuit base.

Top off with banana slices, passion fruit, chia seeds & dark chocolate.
