I’ll have one giant super chocolatey cookie with a side of coffee for breakfast, thanks!

- 1 1/2 cup AP flour
- 1 1/4 cup bread flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp sea salt
- 200g butter
- 1/4 cup white sugar
- 1 1/4 cup brown sugar
- 1/4 maple syrup
- 1 tsp vanilla
- 2 tbsp passion fruit fresh or syrup
- 2 large eggs + 1 egg yolk, room temperature
- 300g grated chocolate
Sift all dry ingredients into 1 bowl.
Separately, beat the butter, sugar & syrup in an electric beater for 5 minutes. Add eggs, 1 at a time. Add in dry ingredients then fold in the chocolate.
Refrigerate for 1 hour. And divide the mixture into two greased round pans. Bake at 180C for 15-20 minutes. Cool for 10 minutes before attempting to flip over!
