This recipe could be ready in under 10 minutes, yup that’s right! And it’s backed with vitamins and minerals that will keep you hydrated.
The ingredients in this recipe are made of items I always have stocked in my pantry. Let me know if the comments below what else you would add to this salad.
Cucumber, Celery and Feta Salad Recipe
- 2 cucumbers, sliced
- 3 celery sticks, sliced
- 6 dates, pitted and chopped
- 1/4 cup walnuts, chopped
- 1 handful mint leaves, picked
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh lemon juice
- 1/2 cup olive olive
- 1/2 Tbsp honey
- Salt & peper, to taste
Place cucumber, celery, dates, walnuts and mint leaves in a deep bowl. Mix it well.
Separately whisk lemon juice olive oil, honey, salt and pepper till well combined.
Pour dressing on the salad and garnish with feta cheese.
