DRIED FRUIT + SPINACH SALAD


Calcium Dried Fruit & Spinach Salad

Want a quick calcium packed lunch? Here’s a Dried Fruit & Spinach Salad that should hit the spot.

 

Serves 2

 

Salad mixture

  • 60g Spinach leaves
  • 40g Arugula
  • ¼ bunch Mint leaves
  • 70g Carrots, shredded
  • 60g Dried figs, sliced
  • 30g Dried apricots, sliced
  • 20g Sultanas

 

Dressing

  • 2 tbsp Tahini sauce
  • 1 tsp Water
  • ¼ cup Lemon juice
  • 1 tsp Honey
  • Pinch Salt & Pepper

 

In a deep bowl, mix all salad mixture ingredients & set aside. Separately, mix the dressing ingredients & adjust seasoning to taste. Dress the salad just before serving.
