Although we have access to Qatayef all year round. My family & I always seem to look forward most to it during the Ramadan season. Though, I must admit, I don’t enjoy queuing up in supermarkets and specialty dessert stores to get my qatayef!
that’s why I decided to prepare it real quick & easy at home! Pancake mixes work perfectly well. The trick is to under cook it, stuff it, seal it and finish off by baking it. That way our qatayef will be stuffed & sealed without leaks and still resemble the true essence of what it’s meant to be.
You can stuff it with anything you like; be it dates or nuts or even chocolate spreads like Nutella. But I’m a sucker for the pineapple and cinnamon combination. It just hits the spot!

Cinnamon Pineapple Qatayef Recipe
- 1 cup al alali Pancake Mix
- 1 1/2 cups cold milk
- 1 egg
- 1 tsp Ground Cinnamon
- 1 can al alali Canned Pineapple Slice, drained & diced
- 1 tbsp vegetable oil
- 1 sachet al alali Cream Delight
- 1 cup white sugar
- 1 cup water
Preheat oven to 180°C (355°F).
In a deep bowl, add al alali Pancake Mix, 1 cup of cold milk prepared from al alali Full Cream Milk Powder, egg and 1/4 tsp al alali Ground Cinnamon. Whisk till smooth.
Heat a small pan, add oil. Add 1/4 cup of batter in the center of pan and cook for 20 seconds on 1 side only or till bubbles appear on the surface. Transfer to baking sheet.
Add 1 tsp diced al alali Pineapple and a pinch of al alali Ground Cinnamon. Fold each one keeping the pineapple inside. Continue till the batter is finished (makes about 10). Transfer to oven for 2 minutes. Then set aside.
In a mixer, add al alali Cream Delight along with the remaining 1/2 cup of cold milk prepared from al alali Full Cream Milk Powder, mix on high for 5 minutes.
In a saucepan, add sugar and water. Bring to boil then reduce temperature to low till all sugar has dissolved (avoid discoloration).
On serving plate, place qatayef with sugar syrup and whipped cream.
Serve and enjoy!
