This Chocolate Fondant with Salted Caramel & Popcorn has become a family favorite! The kids just love it too especially since they get the sweet, the salty & the gooey all in one divine bite.

Also, adding popcorn to sweet desserts seems to be thing nowadays! I’ve been seeing this trend at some of Dubai’s top notch restaurants including at Coya, Four Seasons on Jumeirah Road.

Chocolate Fondant with Salted Caramel & Popcorn

Serves 2


Chocolate Batter

  • 50 g high quality dark chocolate
  • 50 g high quality milk chocolate
  • 30 g icing sugar
  • 40 g LURPAK Clarified Butter + extra for ramekins
  • 50 g flour
  • 2 egg yolk
  • 2 whole egg
  • Flour for dusting

 Chocolate Fondant


To prepare your salted caramel; please follow these steps. For better results, freeze the salted caramel cubes instead of refrigerating for approximately 20-30 minutes.

Then, prepare the ramekins in which you will bake your fondant by brushing the insides with LURPAK Clarified Butter then dusting with coco powder. Set in the fridge for 15 minutes.

Meanwhile, pre-heat the oven to 170C.

Pop your popcorn then set it aside.

Prepare your chocolate batter by melting the chocolate, sugar and LURPAK Clarified Butter on a double boiler (bain-marie) making sure that the water is simmering and not boiling. (Note: the water should not touch the bottom of your bowl).

Once it is has melted, add in your eggs one at a time and mix well. Sift in your flour and mix again.

Pour your mixture into the chilled ramekins, filling them only half way. Then add 1 of the salted caramel cubes in the center then cover with more chocolate. Place them into the oven and let them bake for 8 minutes (this may vary depending on your oven).

Remove from the oven & let the fondant rest in the ramekins for 2 minutes before flipping over & serving with popcorn. You could also choose to serve this with a softened vanilla ice cream.
