Whether you are Arab, Italian or even Chinese – there’s simply no escaping it. Everyone is a Pizza lover! Or at least the majority of the world is.
No matter how delicious a pizza is, I think of all those calories, all that fat & all the bread!!! Ouff!! So I try to stay away when I can, I’m sure you do too.
So I came across an article that was discussing 2015 food trends, and I found out about the cauliflower pizza crust! Finally a gluten-free & healthy crust recipe. I followed Chef John’s recipe from www.foodwishes.com. This guy is great, all his recipes turn out perfectamente!
But that isn’t good enough. Like I mentioned in a previous post, I am on a mission for finding & applying change – especially when it comes to what I eat everyday. I want to push the boundaries of the known. Let me know if you dig it!
- 1 cauliflower head, washed
- 1/4 cup water
- 1/2 cup Parmesan cheese
- 1 egg
- Pinch of ground black pepper
- 1 baking / parchment paper
- 2 tbps tomato paste
- 1 cup mozzarella cheese
- 2 kale leaves, washed
- 400 g Ribeye steak
- 2 figs, washed & cut into quarters
- 1 tbsp honey, for glazing
Pre-heat the oven to 200 C. Start off by preparing the pizza crust by cutting the cauliflower head into small chunks then transfer to a blender and blend for a 2-3 minutes or until fine. Transfer to a medium heated pan and add water. Cook for 5 minutes stirring occasionally. Remove from heat and let cool for 10 minutes. Then wrap cauliflower into a kitchen towel and squeeze the water out. Keep squeezing till there’s nothing left.
Transfer drained cauliflower into a bowl and mix with parmesan cheese, egg and black pepper. Line your baking sheet with baking paper, lay out and flatten the parmesan cauliflower soft crust & shape it. Bake for 40 minutes. Remove from the oven and spread the tomato paste & sprinkle mozzarella cheese. Turn up the heat of your oven to 230 C and return the pizza into the oven to bake for another 10-12 minutes. Then transfer onto a rack to cool for a few minutes.

To prepare the steak, drizzle olive oil in a heated pan, lay the ribeye steak (as a whole piece) and cook for approximately 3 minutes on each side to get medium cooked meat. Cook for an additional few minutes if you like your meat done. Transfer your ribeye steak to a plate and let it rest for 5 minutes. Then slice it into 1-inch thick slices.
When the pizza is slightly cooled layer with kale, then slices of ribeye steak and figs. Finish off by glazing with honey.
