Sometimes the good things have to be hidden. I don’t think I know of a single kid who doesn’t like a real meaty burger. This homemade version factors in all kinds of healthy in each bite. (Hamburger with ground cashews, raisins, breadcrumbs & egg)

The Hush-Hush Cashew Burger Recipe

Serves 3

Ingredients
  • 220g minced beef
  • 2/3 cup cashew nuts, blended
  • 8 sundried tomatoes, diced
  • 1 large garlic clove, mashed
  • 1 small egg
  • 1½ tsp oregano
  • 1½ tsp dried mint
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 3 burger buns
  • 1 cup Arugula leaves
  • 1 beef tomato, sliced
The Hush-Hush Cashew Burger
Preparation

Soak the sun-dried tomatoes in hot water for 5 minutes then drain & dry. In a deep bowl, add all ingredients except for the egg and mix together till well incorporated.

Slowly add in the egg a little at a time & check the consistency as you may not need the entire egg quantity. The texture should be slightly mushy but not runny.

Shape the 3 burgers & pan fry without oil or butter as the oil from the cashews will spill out & cook the burger the for you.

Cook for 3-4 minutes on each side or until done.

Serve with warm burger buns, arugula, tomatoes & the condiment of your liking.
