If you’re looking to cut down on rice then this is a quick, delicious & filling solution. You can also do this with broccoli.
CARB-FREE CAULIFLOWER RICE RECIPE
- Knob of butter
- 2 celery sticks, sliced
- 2 rosemary sticks
- 8 cherry tomatoes, quartered
- 1/4 tsp chili flakes
- 1/2 head cauliflower, chopped
- 1 tsp dried oregano
- salt & pepper, to taste
Wash & pat dry the cauliflower, slice then blend.
In a pan, melt butter & add celery, let cook for a minute then add Rosemary & cherry tomatoes.
Let cook for another minute. Add in cauliflower & seasoning & cook for 5 minutes. Serve warm.
