I can’t stress to you just how much I love having breakfast! I seriously can’t start my day without it and of course I have to get creative.

This Asian inspired sweet potato patty & fried egg is a light substitute for carbs in the morning! So simple to make!

 

Serves 2

 

  • 200g sweet potato, grated
  • 2 garlic clove, sliced
  • 1 tsp ginger, grated
  • 2 pinches chili powder
  • 4 tbsp butter
  • 2 eggs
  • 1/2 stalk green onion
  • Salt & white pepper, to taste

 

 

Mix sweet potato, garlic, ginger, chili, salt & pepper. Divide into two portions. In a small frying pan, melt 1 tbsp of the butter & spread one portion of the sweet potato mixture evenly, cook for 7 minutes on med-low heat.

 

Carefully flip over & cook for an additional 5 minutes while adding 1 tbsp butter on the edges so it doesn’t stick to the pan. Repeat to make the second patty.

 

Fry each egg separately & serve seasoned & garnished with green onion. YUMMMM!!
