APPLE + BLACKBERRY CRUMBLE


If you don’t know this about me by now, then let me put it out there! I love homey, cozy meals… those kinds of meals that make you want to hug yourself under a blanket all day while sitting by a fireplace – even though we don’t have a use for those here in Dubai!!!

When I’m in that kind of relaxed mood a crumble is all I need to complete the experience.

This recipe couldn’t be made any quicker!
Makes 2-3

  • 3 tbsp butter
  • 1 apple
  • 1½ cups blackberries
  • 1 tbsp pancake syrup
  • 3 tbsp brown sugar
  • 1½ vanilla essence
  • ¾ tbsp ground cinnamon
  • 1/3 cup oats
  • ¼ cup pumpkin seeds
  • 1/8 cup crushed hazelnuts
  • 2 scoops ice cream

Preheat oven to 165C. In a pan, melt 2 tbsp butter and cook out the apples for 2 minutes. Add sugar, syrup, 2 tbsp sugar, vanilla essence & ½ tbsp cinnamon. Cook for an additional 5 minutes. Add blackberries & cook for 3 minutes. Remove from heat & divide into ramekins.
Melt remaining butter, add oats, pumpkin seeds, hazelnuts, remaining sugar & cinnamon powder & toss for 2 minutes. Top off ramekins with granite mixture & bake for 3-5 minutes just to get a slightly brown golden color. Remove from the oven & immediately serve with ice cream.
